General information

Sulfites are the salts and esters of sulfurous acid. They are strong reducing agents and are used in many ways because of this property. As a natural component, sulfites can be detected in almost all wines.

Areas of application

Sodium sulfite is used in the food industry as a food additive (E 221). It has a germicidal effect and thus counteracts the colonization of bacteria, yeasts and fungi. Sodium sulfite also has an antioxidative and preservative effect, as it blocks certain enzymes and thus prevents the breakdown of vitamins, colorings and flavors promoted by atmospheric oxygen.

Sodium sulfite is used in the following foods, among others:

• Potato products
• Dried fruits
• Dried fish
• Dried tomatoes
• Dried vegetables
• Meat substitutes
• Fish substitutes
• Starch
• Barley
• Sago
• Wine

Since sodium sulfite can destroy the vitamin B1 (thiamine) contained in food, it must not be added to foods that serve to supply thiamine. This applies to the following foods, among others:

• cereal products
• dairy products
• meat products
• fruit juice
• beer

Like sodium sulfite, sodium bisulfite is used in the food industry. As a food additive (E 223) it is mainly used as a preservative and antioxidant.
