The salts and esters of acetic acid are called acetates. The salts are mostly colorless, crystalline solids, generally water-soluble substances.

Commercially important acetate salts are aluminum acetate used in dyeing, ammonium acetate, a precursor of acetamide, potassium acetate used as a diuretic, and sodium acetate. All three salts are colorless and easily soluble in water.

Sodium acetate is of great importance in the food industry as a food additive E 262a. It is used as a flavor enhancer, stabilizer or acidity regulator in cereal products, baked goods, jellies, candies and soups.
